Alcalase is a liquid enzyme preparation containing a protease suitable for use in high temperature, moderate pH, detergent products.

SOURCE

Alcalase is produced by submerged fermentation of a selected strain of Bacillus licheniformis. The enzyme protein is separated and purified from the production organism.

USES

Alcalase is used in detergent formulations to remove protein-based stains, e.g., grass, blood, mucous, faeces and various foods such as egg and gravy.

ACTIVITY

Alcalase is an endo-protease of the serine type. It has a very broad substrate specificity. In other words, it can hydrolyse most peptide bonds within a protein molecule. Peptides are formed which are either dissolved or dispersed in the washing water.

Alcalase is active between pH 6.5 and 8.5. It functions between 45 and 65 °C with maximum activity at about 60 °C, above which the activity falls rapidly.

Some foods, e.g., eggs, potatoes and blood plasma, contain protease inhibitors that may inhibit Alcalase activity. Alcalase is gentler on wool and silk than other proteases.

STORAGE

Alcalase should be stored at 3-5 °C.
