How do you peel an orange without touching it? With Peelzym of course.

Peelzym is produced by a selected strain of Aspergillus aculeatus.

USES

Peelzym is made especially for peeling citrus fruits. It completely removes the white part (albedo) of the fruit, allowing easy removal of the skin. Some citrus fruits, such as mandarin oranges, can also be completely separated into individual segments by the activity of the enzyme.

ACTIVITY

Peelzym is a mixture of pectolytic enzymes. The main enzyme is beta-glucanase (endo-1,3 (4)-). As a side activity, Peelzym also contains small amounts of xylanases, hemicellulases and cellulases. These enzymes exhibit optimum activity around pH 4.5, and at 50 °C.

STORAGE

When stored at 3-5 °C, Peelzym maintains its declared activity for at least 12 months.
